Carb Friendly Gnocchi

Growing up, homemade pasta was for "holidays only."  Mom said, "It's too much work to make homemades."  That's what we called home made pasta, "homemades."  One of the homemades Mom never made was gnocchi, and I never knew why.  It's so easy and delicious!  Maybe the extra step of making potatoes was daunting.  Or, perhaps it was the potato itself.  Mom was into "high protein - low carbs" way before it was fashionable, and she never really ate much pasta stating, "I don't do pasta."  Well, I do, and I love gnocchi.  So, for my carb watching friends, I dedicate this recipe to you.

Try it with a light brown butter and sage sauce, or just use your favorite red sauce.  If you've attended a Chow Bella Cooks Tuscan class, the Suga Di Compagna works nicely.
