Big Flavor In A Small Morsel

In my March newsletter, I had a picture of healthy coconut shrimp I made for a party in New York City.  It is also a feature in my Healthy Cooking class.  Because I had so many requests for the recipe, I've decided to publish it in today's blog.  I usually reserve these recipes exclusively for my classes.  Publishing the recipes only challenges me to come up with new recipes for the class. Of course, if you're allergic to shellfish, this would not be considered a healthy food option for you.

In this weeks test kitchen, I'll be preparing for the Tuscan II, Spanish and Healthy Cooking classes for the spring.
