Short On Time Big On Flavor Parmesan Chips

It's spring time.  Well, almost.  The weather, of late, has inspired me to get out and walk or ride my bicycle everywhere.  The rising gas prices also help to get me moving, instead of using the car.  It's also the time where I am seeing an increase in my Healthy Cooking Classes, and these classes are among my favorite, because it really brings out my creative side. 

When I walk or ride, it's like a meditation in motion for me.  My thoughts wonder, and my creative juices get going on how I can improve recipes, classes or just how can I spice up dinner that night.  On my walk home from my Pilates class this morning, I was inspired to share one of my favorite, easy and flavorful recipes:  Parmesan chips.  These little babies are low in calories and big on flavor.  You can eat this plain (a little strong for me), but you can crumble them onto a salad (your steamed kale salad), soup or use them as a flavorful garnish. Your guests will think you slaved all day making these delicate little guys.

You can make these ahead of time and store in an airtight container in the refrigerator.
